Carrot is a root vegetable widely appreciated for its bright orange color, crisp texture, and sweet earthy taste. Belonging to the Apiaceae family, carrots are a rich source of beta-carotene (a precursor to Vitamin A), antioxidants, and dietary fiber. The roots vary in size and shape but are typically cylindrical and tapering, with smooth skin and a juicy interior.

India ranks among the top producers of carrots, especially in states like Punjab, Haryana, and Uttar Pradesh. The fertile soil and favorable climatic conditions ensure year-round availability of both desi (local) and hybrid varieties that meet international export standards.

In Indian cuisine, carrots are commonly used in sabzis (vegetable dishes), halwa (a sweet delicacy), and pulao (rice dishes). Carrots are also vital in baby food production due to their nutritional richness and natural sweetness. Furthermore, their high antioxidant content makes them valuable in health foods and functional beverages. Carrots support eye health, immune function, and skin wellness, making them a preferred ingredient in nutraceutical and wellness products.

Storage Condition

Store in cool, well-ventilated storage areas at 0–4°C with relative humidity between 90–95% to maintain crispness and prevent wilting. Avoid ethylene exposure to reduce risk of bitterness and decay.
