Star anise, also known as badian, is the dried, star-shaped fruit of the evergreen tree Illicium verum, native to East and Southeast Asia, particularly China and Vietnam. The fruit is easily recognizable by its beautiful eight-pointed star shape, with each arm housing a single glossy, brown seed. When mature and dried, the fruit ranges in color from light brown to deep reddish-brown, becoming woody and brittle in texture, yet intensely aromatic.
Star anise is not only a feast for the eyes but also a powerhouse of flavor and medicinal compounds. Its seeds and pericarp (outer shell) are rich in essential oils, fatty oils, mineral salts, natural sugars, organic acids (including malic acid), and a potent aromatic compound called anethole, which can make up up to 90% of the essential oil content.

Application
Star anise is widely used in cooking. It is especially added to confectionery. Dried fruits are used, and the seeds that were in the stars are ground into powder and added as a spicy, aromatic additive. Star anise is also used to make alcoholic and non-alcoholic drinks. If you add it to sweet strong tea, it will give it a pleasant aroma and taste. Star anise goes well with garlic, ginger, cinnamon, cloves, allspice and red pepper, dill, parsley, in sweet dishes and confectionery - with cinnamon, licorice, vanilla.
