Nutmeg is the dried seed of the fruit of the sweet nutmeg tree (Myristica fragrans), a tropical evergreen native to the Spice Islands of Indonesia. The nutmeg seed is hard, oval-shaped, and marked by distinct, sinuous deep grooves. Its color varies from light to medium brown, depending on drying and processing methods.

The aroma of nutmeg is warm, rich, and slightly sweet, with camphorous and woody notes that intensify when freshly ground. Its flavor is spicy, resinous, and mildly hot, often lingering with a sweet and nutty aftertaste.

Nutmeg trees bear fruit similar in appearance to apricots. Once the fruit ripens, it splits open to reveal a hard seed (nutmeg) wrapped in a lacy, red aril known as mace, which is also used as a spice. Each fruit thus yields two valuable spices — nutmeg and mace.

Application

Storage conditions

Store in dry, clean, well-ventilated warehouses free from pests, at a relative humidity of no more than 75% and a temperature of no more than 20°C.
