Mace is the dried, lacy reddish covering (aril) that encases the seed of the nutmeg fruit (Myristica fragrans). Often referred to as the "sister spice" of nutmeg, mace offers a similar yet more delicate, refined flavor profile. It is warm, aromatic, and slightly sweet, with a hint of pepper and citrus, making it a prized ingredient in both sweet and savory dishes across global cuisines.

Once separated from the nutmeg seed, mace is dried until it takes on a golden-orange to light brown color and brittle texture. It is then traded in its natural, flat, blade-like form (mace blades) or ground into a fine powder.

Storage conditions

Store in dry, clean, well-ventilated warehouses free from pests, at a relative humidity of no more than 75% and a temperature of no more than 20°C.
