Green cardamom, often referred to as the “Queen of Spices,” is the dried, unripe fruit (pod) of the Elettaria cardamomum plant, a perennial herb belonging to the Zingiberaceae (ginger) family. Known for its distinctive fresh, aromatic fragrance and sweet-spicy flavor, green cardamom is one of the world’s most premium and widely used spices.
India is one of the largest producers and exporters of high-quality green cardamom, particularly from the Western Ghats of Kerala, Karnataka, and Tamil Nadu, where the spice grows under the shade of tropical forests and is carefully hand-harvested and sun-dried. Other major producers include Guatemala and Sri Lanka, though Indian cardamom is especially prized for its aroma, color, and bold seed content.

Application
Green cardamom is a remarkably versatile spice that is used across culinary, medicinal, cosmetic, and aromatic applications. In the culinary world, it is prized for its ability to elevate both sweet and savory dishes with a single pinch. In Indian cuisine, cardamom is a key ingredient in masala chai, curries, biryanis, rice dishes, and traditional sweets like gulab jamun, kheer, and halwa. The spice is also widely used in Middle Eastern, Scandinavian, and Persian cuisines, where it enhances dishes ranging from meat stews to spiced breads and pastries. In Western countries, it flavors cakes, puddings, ice creams, and holiday beverages such as mulled wine and eggnog. Both whole pods and ground cardamom are used depending on the application.
Storage conditions
Store in dry, clean, well-ventilated warehouses free from pests, at a relative humidity of no more than 75% and a temperature of no more than 20°C.
