Dry ginger, also known as sun-dried ginger root, is the dehydrated form of the underground rhizome of the Zingiber officinale plant. It is produced by harvesting fresh mature ginger, cleaning and peeling it, and then sun-drying or mechanically drying the rhizomes until they become hard, fibrous, and beige to light brown in color. Once dried, the rhizomes can be sold whole or ground into a fine powder.

India is one of the largest producers and exporters of dry ginger in the world, particularly from states like Kerala, Karnataka, Sikkim, and Northeast India. Indian dry ginger is highly regarded for its high oil content, distinctive aroma, and strong flavor, making it a preferred variety in international markets.

Application

Dry ginger is a key ingredient in masala chai, curries, spice blends, pickles, and traditional sweets across South Asian cuisine. Storage conditions

Store in dry, clean, well-ventilated warehouses free from pests, at a relative humidity of no more than 75% and a temperature of no more than 20°C.
