Coriander is the dried seed of an annual herbaceous plant (Coriandrum sativum), belonging to the Apiaceae family. The seeds are small, round to oval in shape, ranging from 3 to 6 mm in diameter. Their color varies from greenish-straw to light brown depending on maturity and processing. Each seed is a tiny reservoir of essential and fatty oils that give coriander its characteristic flavor and aroma.
The taste of coriander is complex and layered — mildly spicy, sweetish-bitter with subtle citrus notes that evoke hints of orange peel or lemon zest.
