Cinnamon is derived from the inner bark of a small evergreen tree belonging to the Lauraceae family. Once harvested, the bark is delicately stripped and left to dry, naturally curling into the familiar quills or rolls that are later cut into pieces. These light brown, aromatic sticks are more than just a spice — they’re an ancient treasure passed down through centuries of culinary and medicinal use.

Application
Cinnamon is used in the form of sticks, ground and planed in most branches of the food industry. It is included in the spice mixes "curry" and others, it is added to marinades, red and white head cheese, blood sausage, pates, cheese products, curd mass, ice cream. Canned fish, sauces, many types of mustard are prepared with cinnamon. In cooking, cassia is added to sweet dishes with fruits, to meat dishes with lamb, pork and chicken. In flour baked goods, porridge, pilaf, sweet desserts and drinks. A cinnamon tube can be used as a fragrant spoon, which, swelling, gives its taste to a hot drink. The spice is added to hot liquid dishes 10 minutes before readiness.
Storage conditions
Store in dry, clean, well-ventilated warehouses free from pests, at a relative humidity of no more than 75% and a temperature of no more than 20°C.
