Black pepper is a classic spice, which is the fruit of a tree-like vine up to 6 m high, spherical in shape, 3-5 mm in diameter with a hard shell. The berry is green at first, and as it ripens it turns red and then yellow. To get black pepper, take unripe fruits and dry them in the sun or over low heat until they turn black and wrinkle. The darker, harder and heavier the fruits, the higher the quality of the black pepper. The plant's homeland is considered to be the southwest coast of India, formerly known as Malihabar. There it is called the "Malabar berry". On the world market, the best varieties of black pepper are considered to be Malabar and Telecheri.
The largest exporters are Vietnam, Indonesia, India, Brazil, Madagascar.
