Groundnut (Arachis hypogaea), commonly known as peanut, is a nutrient-dense legume valued for its rich oil and protein content. The plant flowers above ground but develops pods underground; each pod typically contains one to three seeds. India cultivates several commercial types suited to different uses — from oil extraction to direct consumption — and continues to improve varieties for yield, flavor, and resistance to storage pests.

Characteristics
Taste: Mild, nutty, slightly sweet when fresh; roasted kernels develop deeper, toasted notes.
Appearance (Structure): Whole kernels are generally oval to round; size varies by variety (small to large kernels); smooth surface for shelled kernels; pods are hard and brownish when mature.
Smell: Fresh groundnuts have a subtle nutty aroma; rancidity (off-odors) indicates degraded oil quality and should be avoided.

Application
Groundnuts are multifunctional: they are pressed for edible oil (high-quality cooking and industrial oils), roasted and salted for snacks, ground into pastes and butters, or used as ingredients in confectionery, bakery goods and savory dishes. By-products such as deoiled cakes serve as high-protein animal feed or fertilizer inputs. Beyond food, groundnut oil finds uses in cosmetics and certain industrial formulations, while high-quality kernels are processed into peanut butter, peanut flour, and value-added snacks.
Storage Condition
Store in clean, dry, well-ventilated warehouses protected from pests and direct sunlight. Maintain relative humidity below 65% and temperature preferably below 25°C. Ensure moisture content is kept at or below 8% to reduce risk of mould and aflatoxin development. Use FIFO stock rotation, periodic inspections, and pest-control measures to preserve freshness and oil quality.
